Holiday Health Challenge Awards Banquet Held

Weight gain over the holiday season is a battle for anyone that enjoys Christmas cookies and pumpkin pie with whipped cream!  To address the annual weight gain that occurs every  November and December, the Upland Hills Health Cardiopulmonary nurses challenged their patients to a Holiday Health Challenge.

The celebration for participants in the Health Challenge was held February 27, 2006 at the hospital.  A crowd gathered to sample a delicious heart-healthy lunch including grilled turkey, pita bread, Greek Tomato Salad, fresh fruit, angel food cake and Amaretto Dessert Dip. As Cardiopulmonary Co-Manager Marianne Crowley RN explained, “There are so many delicious and healthy food selections available to us today. We just need to train ourselves to make the right choices.”

Besides the food and fellowship, participants were treated to a presentation by Dodgeville Attorney Janis Tabor. In her pursuit of a healthier lifestyle, Janet was able to shed 50 pounds through a program of eating healthy, tracking her calorie intake, and exercise. Tabor’s weight-loss effort began in September 2005 and was a part of her preparations for bariatric surgery. Now she is optimistic that her new commitment to healthy living will help her to reach her weight-loss goal—without the surgery.

Accolades and prizes were awarded for those excelling at behaviors key to healthy living. Challenge participants received recognition for water consumption, fruit & vegetable servings, and time spent exercising.

Recipes:


GREEK TOMATO SALAD


1 red or yellow pepper coarsely chopped.
1 cucumber peeled and sliced in ¼ inch slices
1 carton small grape tomatoes or cherry tomatoes
1 can black olives (pitted, whole)
½ cup of crumbled Feta Cheese (Blue Cheese can be used as an alternative)

Fresh basil or min leaves cut and sprinkled through out. Mix all ingredients
Pour Olive Oil & Vinegar Salad Dressing (Hendreckson’s is recommended) over the salad and mix well.
Refrigerate for at least 1 hour before serving.
 


AMARETTO DIP
Recipe from the kitchen of Karren Zimmerman in Dodgeville

1 box of fat free, sugar free instant vanilla pudding
1 cup fat free milk
3 tablespoons of Amaretto liqueur
1 Envelope of Dream Whip prepared according to directions  with ½ cup of fat free milk (omitting vanilla)

Whisk first 2 ingredients together.
Add Amaretto. Prepare Dream Whip and fold into the pudding mixture. Chill in refrigerator for at least two hours before serving.
Serve with fresh fruit or angel food cake pieces as a dessert dip.
